Christmas is less that 3 weeks away its coming fast and furious and I know some of you like me haven't finished buying all of your christmas presents or have run out of ideas.
Every christmas when I was younger my family and I would make christmas cookies and decorate them and they made great gifts for friends, family and even teachers. I always made the shortbread sugar cookies. But they're not always the healthiest. This recipe taste like he real ones but doesn't have much of the bad stuff in it. My favourite part about making these cookies is that you can get the whole family around, friends as well and spend the whole afternoon baking and decorating them, and wrapping them up for gifts.



Ingredients
Servings 24     Calories 92      Sugar 5.8    Fat 4.4

2 Cups of gluten free flour
1/2 of coconut sugar
3/4 tsp baking powder
1/4 tsp salt
4 Tbsp of powdered sugar (add half coconut sugar and half flour will work as well)
8 Tbsp of butter or (vegetable spread)
1 tsp of xanthan gum (if your flour blend already contains xanthan gum then do not add)
1 large egg, beaten
1/2 tsp of vanilla extract

Directions

STEP ONE
Preheat the oven to 175°C, Sift all of the dry ingredients into an bowl together.

STEP TWO
Beat the egg till fluffy then add all of the wet ingredients to the dry ingredients beat together. If you do not have a powerful beater use you hands, I find that is the easiest way.

STEP THREE
Take the dough and work the dough with your hands until its forms in to a ball. roll your dough out on to some baking paper or a powdered surface, until it is about 1/3 of an inch thick.

STEP FOUR
Using a cookie cutter cut out the dough and place on to a cookie sheet. reforming the rolling out the extra until there is no dough left. Bake for 9 to 11 minutes.

STEP FIVE
Allow cookies to cool for at least 5 minutes before frosting. Once cooled this is when the fun begins gather all of your frosted christmas colours and lollies and have some fun. store in an air tight container.
