I leave for England on Sunday so I have been a bit busy organising my life in to one suit case, I'm starting to go crazy, so sorry for the lack of posts in the last week.
With it being the last week of being in New Zealand I have been eating all of my favourite foods and snacks and one of them is hash browns I know I can get them in England but kumera (the NZ sweet potato) hashbrowns are the best, and guess what these hashbrowns are not fried in thick litters of oil nor to they have anything added to them.
Ingredients
Servings 1 Calories 260 Fat 9.8
1 medium sized kumera (sweet potato)
oil for cooking
1 egg
1/4 avocado for garnishing
Directions
STEP ONE
Peal and wash the sweet potato, then grate it all and squeeze out the excess water.
STEP TWO
Heat up a pan with a little bit on oil, tip in the sweet potato in the pan and shape in to a round patty. press it down until they all combine.
STEP THREE
Cook both sides till golden brown (flip it like a pancake if you dare). serve with avocado and a poached egg.
